I live with three meat eaters. While my husband Blake and our two teenage boys Quin and Luke would prefer to eat meat, they do on occasion enjoy some vegan meals.
But my favourite time is when I am on my own for dinner. It allows for some creative fun which is where the Ginger Tofu came from. So easy. So fast. So nutritious and so yummy!!!!
Ingredients? Whatever you want!!!
I usually start these meals with what needs to be used up and build around the sauce. For this meal I had tofu, asparagus, kale, snow peas, mango and sesame seeds.
Marinade:
This marinade is a favourite and taken from a recipe by noracooks. She has fantastic vegan recipes filled with ingredients I always have in my fridge. But truly mix and match what you like. There are no rules in this dish! That’s what makes this kind of cooking so fun!
4 tablespoons soya sauce
3 tablespoons rice vinegar
1 tablespoon pure maple syrup
1 tablespoon sesame oil
2 minced garlic cloves
1 tablespoon fresh ginger
2-3 tablespoons natural oil like canola
Tofu takes on whatever flavours you add to it so allow the marinade to do it’s thing and let it soak in the fridge for an hour. Using your favourite skillet cook the tofu until all the liquid is absorbed before adding the veggies.
Plate it. Top with mango and sesame seeds.
Remember to make it your own. You can choose a marinade from the internet or throw caution to the wind and create from scratch. And If you don’t like the taste of something you started, change it by adding an ingredient you like. You will learn what flavours compliment each other and which ones don’t.
