Veggie Lo Mein

Vegetarian Lo Mein

 This is such a fast and easy recipe – great for mid-week when time is not on your side!

Ingredients:
1 package (363 g which fed 5) Lo Mein noodles or 4-5 oz dry noodles such as egg noodles or fresh soba noodles (these are denser so use enough for 2 servings) or Gluten free noodles of choice.
Lo Mein sauce:
•    2 tbsp rice vinegar or Chinese cooking wine (I used rice vinegar)
•    1 tbsp oyster sauce (as I am vegan, I omitted this) you can add Hoisin sauce or sweet soy sauce. I mixed soy and maple syrup together as I didn’t have Hoisin.
•    3 tbsp soy sauce (make sure if you require Gluten Free, it says so on the label)
•    2 tsp sesame oil
•    1 tsp maple syrup, sugar or honey
•    ¼ liquid smoke (I used smoked paprika)
•    ¼ tsp pepper
•    ½ tsp sriracha (or any good hot sauce will work)

Lo Mein stir fry:
•    2 tbsp wok oil, peanut oil or coconut oil (I used coconut oil)
•    ½ onion, thinly sliced
•    3 garlic cloves chopped
•    1 tsp minced ginger (I always end up using more ginger … maybe 2 tsp)
•    ½ to 1 bell pepper – thinly sliced
•    1 cup carrots cut into matchsticks
•    1 cup cabbage – roughly chopped
•    1 cup snow peas
•    Asparagus - as many spears as you want
•    Bean sprouts – lots as I love the crunch
•    bok choy – maybe 3 stalks, cutting each stalk in half lengthwise and then crosswise into ¼ inch pieces 
Garnish with chopped spring onions
Options: if your group are vegan you can add tofu. If they want meat or shellfish you can simply add thinly sliced beef, chicken breast or shrimp.

Instructions:
1. Boil water and cook the noodles according the package

2. Mix the sauce ingredients together in a separate bowl

3.  In a wok or large skillet, heat oil over medium heat. Add the onions stirring continuously then add in garlic and ginger.

4. Add in carrots, peppers, snow peas and cabbage stirring often. You want to keep the veggies crispy.

5. If using, add your asparagus, bean sprouts and bok choy

6. Add in the cooked noodles and toss to make sure they get mixed in well.

7. Add the Lo Mein sauce and stir continuously for a few minutes. If you think it’s not saucy enough, add a bit of water.

8. Garnish with spring onions

That’s it. Plate on your favourite dishes and serve. Our boys are not the best vegetable eaters, which is odd seeing as I am vegan, but they loved this. The sauce and noodle combo clinched it for them!

I love to cook. I love to please and I love it when people tell me how good things are. I also love it when our teenage boys eat meals that are different then usual. This is both easy, fun and colourful. And sometimes that’s all it takes for your finicky eaters to give it a try!
